What are you eating today??
This morning I am starting with left over chicken and green beans in a skillet all fried up with butter. If you don’t know this about me.. I am not an EGG girl.. I don’t like them. I try over the years to eat them and it does not go well. š
So for me breakfast is a big meal of veggies and some kind of protein. Yesterday it was a pork chop with green beans.
Think outside of the box. Give your self a great start! Eat and eat well my friends!
I’ve been traveling this week so I’ve been eating a beautiful veggie omelet from the resort restaurant, two (rather than the standard 3) lovely pastured eggs with spinach, mushrooms, asparagus and tomato a little swiss cheese and bacon all cooked up in grass-fed butter too! But, I’m not a huge egg-girl either so 3 mornings of eggs will do me for a while! Can’t wait to get home tonight so I can enjoy some egg-free breakies! I will have to say though that they are a nice option when traveling…kinda hard to mess them up!
I love eggs myself. But, so happy that you are doing good. I definitely agree with you, think outside the box. I am redoing, Atkins! And, am doing better with it myself, nowadays. A year, or two ago, I had stomach flu symptoms for three months, everyday. I go up, and down a bit with my carbs, and my body seems to be doing better with it, as a vegetarian. Sometimes, I really do struggle with it! I always wonder if the vegetarian products can count towards are veggies? Now that I am vegetarian it would be a lot of help, and easier. I will have to experiment more with it. Is it easy to find grass fed butter in the supermarket? Just wondering! Good luck to you, and to everyone doing a low carb lifestyle!
Thank you for saying thinking outside the box. I am going to start doing that! Do you count your carbs now? Plus, your calories? Or can you do it free style, having a good idea on what you are doing? Today, I had two morning star veggie sausages. Then I had some leftover dessert, which was full fat ricotta cheese, made into a cheesecake. It called for six eggs, and for baking it, I used egg sub for the three eggs, and then the three whole eggs. I sweetened it with granular truvia. I had to thicken it, and I had to use three tablespoons of unbleached regular flour. I can never find the thickener that they recommend. I had arrow root, but I did not know how much to use, or if it would be better. Anyway, I ate some of that, but I did not portion it out. I would like to get back into doing my low carb. Without getting sick this time. I have to watch my cholesterol with the egg yolks. But, I have no problem with eating the eggs, unless I would change and go vegan.
I accidently juiced 3 apples today (just started the Atkins diet) and I realized that’s 3 days worth of carb eating – what should I do … should I eat 0 carbs for the next 3 days?
No. you need the veggies. Eat the rest of your good veggies and the protein and fats. Tomorrow you know better. You don’t juice on Atkins. We want all the fiber that goes with our veggies. Go to the Phase 1 section of ATkins.com and download the acceptable foods for phase1. It is not the end of the world.. It could have been a box of twinkies..:)
