Spinach Ricotta pie. The other one is so big I made a smaller version today. 

 

I used what I had in my freezer

42 oz of frozen spinach. 

2/3 cup Whole Milk Ricotta

1 cup Mozarella

2 tbs butter 

 

Cook spinach drain well, Add butter,ricotta and 1/2 mozarella mix well. Salt and pepper to taste. Spray pan and put mixture in and add rest of mozzarella on top. 

 

Bake at 350 until the cheese on top is nice and brown.. yum!!
